Does anyone have any experience with patients with Dementia and using work simulating such as a car garage set up or an office set you
any information or direction to articles/research would be greatly appreciated

I've found that it's fairly dependent on the setting that you're seeing them in as well as the stage of dementia! If you are in a setting where you can't bring in tools, sometimes using things such as model airplanes/cars works well because it's still "turning on" the patient's mind.
